Step 1: Place 4 oz softened cream cheese, 2 T strawberry jam, 1-1/2 T powdered sugar, 1/8 t almond extract, and pink food coloring in mixing bowl and stir until mixture is smooth. Chill in refrigerator for 10-15 minutes.
Step 2: While cream cheese mixture chills, rinse strawberries and pat dry with a paper towel. Leaving the leaves on, slice each strawberry in half lengthwise (long way) and set aside on plate.
Step 3: Spoon cream cheese mixture into sandwich bag. Cut a small corner from the bottom of bag.
Step 4: Squeeze the bagged mixture onto strawberry halves until strawberry middle is covered.
Step 5: Top strawberry bites off with sprinkles.
